Blueberry French Toast in a Jar
There is nothing better than warm comfort food to start your day. This
healthy featured recipe is a twist on a breakfast classic will soon be
a household favorite. Whole grains, fiber, protein and antioxidants mean
that this jar offers more than just delicious flavors.
2 ea Slices of Whole Grain Bread cubed
2 ea Egg Whites
1 tablespoon Almond Milk Unsweetened Vanilla
1 teaspoon Date Sugar
1⁄3 cup Frozen Organic Blueberries
1⁄4 teaspoon Pure Vanilla Extract
1 dash Cinnamon
Optional 1 tablespoon Plain Vegan Yogurt For Garnish
Optional 1 tablespoon Maple Syrup For Garnish
Optional 1 teaspoon Slivered Almonds For Garnish
This recipe makes one 16 oz wide mouth jar (pint).
Preheat oven to 350 degrees
Lightly coat the inside of the jar with a mist of organic olive oil.
Add the egg whites, almond milk, date sugar, vanilla and cinnamon to a
medium sized mixing bowl and whisk until well blended.
Add the blueberries and bread to the egg mixture and gently stir until
the bread has absorbed most of the liquid.
Pour the egg, berry, bread mixture into the jar.
Bake at 350 degrees for 20-25 minutes or until golden brown and cooked through.
Eat as is (it is delicious this way) or top with plain yogurt, slivered
almonds and/or maple syrup.
Enjoy immediately or cover and store in the fridge for 3-4 days.
